Students of the Restoration and Catering course of the Instituto Politécnico da Guarda (IPG) have published a recipe book for as much as €2 for all displaced university students (and with little experience in the kitchen). But now that food prices have gone up, the focus has shifted to finding new economical recipes for everyone.

Chicken couscous with walnuts

The final step is simple: “Add the sautéed onions, peppers, and walnuts plus a tablespoon or two of butter to the couscous and stir well,” says the recipe. Within ten minutes it is ready to be served.

In addition to being the cheapest meal in the book, this tortilla alternative is also simpler than the original. But before you know how to do that, go get an onion, Courgettesmushrooms and three eggs.

Begin by browning the skinned and seeded tomatoes with the garlic for about five minutes. While you wait, toast slices of bread in the toaster and grab a can of tuna, mozzarella, and oregano.
Spread the tomato sauce over the slices of bread, add the tuna, add the cheese and oregano. Take it to the oven to melt the mozzarella and serve. It costs 2 euros and we assure you that it is worth it.
Vegan nail in bread
We haven’t forgotten about vegans, and until proven otherwise, there’s nothing easier than a vegan nail into baking. All you need are ripe tomatoes, onions, red peppers, and mushrooms.
The first step is to cut the vegetables into thick slices and start grilling them. Then just drive a nail into the bread with the sauce—and serve Chips Sweet potatoes and peanuts for a different twist.
And for dessert: pineapple and ice cream
If you have to bring dessert to dinner or if you need something sweet, a slice of pineapple, a scoop of ice cream, cinnamon, and honey will do the trick.
Start by putting honey and cinnamon on a pineapple slice and put it in the oven for ten minutes. Then, serve it with a scoop of ice cream you have in the freezer and, if you like, add a scoop Palmer to become crunchy.
